Happy Friday, friends! I don’t know about you, but I am so ready for the weekend, but first, let’s talk breakfast. I love trying to put a fun spin on breakfast because for me, it is the least exciting meal of the day. The one I look forward to the least. In fact, I have to force myself to eat a little something because I am just not a big breakfast person. I love breakfast foods, but I am not all that hungry when I wake up in the mornings. How To Be Happy As A Stay At Home Mom
I have been fortunate enough to be a stay at home mom (or, technically, a work at home mom) since having my son in October 2013. I have always worked part-time and full-time off and on, and because of that, I would be lying if I said I didn’t struggle with a lot of doubts. Am I doing the right thing sacrificing extra income to stay at home with them? I have struggled with a lot of self doubt and feelings of worthlessness because I have not contributed a lot financially. I’ve struggled with loneliness and a lot of stress that comes along with staying at home with two babies (18 months apart) and rarely getting a break. But now I can say I am 100% happy and confident in my decision to be a stay at home mom. How did I get there?

Valentine’s Day Outfit
We celebrated Valentine’s Day on Monday night. The night of the monsoon, I’ll call it (since my super casual outfit if you follow me on Snapchat). Of course, the one night we go on a date (our first one in close to 2 months) it would be terrible weather. We were under a tornado warning up until 30 minutes before we left the house. Fortunately, my husband and I just laughed about it and went anyway. We had dinner at a Hibachi/Sushi place in town and then went to Books A Million. Why do all of our dates end there? Does that make us nerds? haha I think it is just nice to go look at books when the kids aren’t with us. That is the one place I will not take them with me. Why? Well, I did once and let’s just say we were there forever picking up books off the floor and putting them back on the shelf.
It was so nice to get out of the house for a bit – just the two of us and talk and spend quality time with one another. Quality time is my love language after all. This is the outfit I actually wore on Valentine’s Day to church. I found this blush top online at Nordstrom (they are having their big winter clearance sale) and had a fit over it! It is 3/4 sleeves so it will be a great top to wear through spring.

My Little Lovebug
If you haven’t noticed by now, I have about 10,000 nicknames for my kids. Nugget, squirt, angel, Hampster (for Hamp) and Lovebug for Sophie. The list goes on and on, really. It’s getting out of control. So, when I stumbled on this little slouchy top I knew I had to grab it up or Soph. It was just too cute to pass up! She is after all, my little lovebug.

Valentine’s Day Weekend 2016
We had such a fun weekend. We started off Valentine’s day weekend by going to Ryan’s uncle’s farm with the kiddos. They just had baby goats that were only 5 days old so, of course, we had to go love on them. They were adorable! After that we went out to my grandparent’s house to see my cousins who were in town and really enjoyed spending time with all of them. Sunday was a super chill and relaxed day. We were all so tired from a really busy day Saturday so we crashed and watched movies after church while the kids napped.

I know you all are huge fans of Logan’s amazing recipes and her fitness posts (as am I), so I wanted to share my favorite kid friendly healthy recipes. Now, I have to say I am not an amazing cook but I do cook a lot! I would much rather bake; but alas, my kids cannot survive on cookies 😉 For anyone interested in healthy snacks for sweet lovers, make sure to check out healthy snacks for busy moms (like these protein pancakes below)!
Over the years, I have found some great recipes and tweaked them. So these are all of our adapted favorites and are perfect for busy families. My kids certainly aren’t perfect (and come dinner time I often want to pull my hair out😉 but, my one rule is that everyone needs to eat the same meal, and that the kids eat real food (even my nine month old!). Most of these recipes are gluten free but you can obviously use regular pasta in them instead if you would like! - Cook’s Illustrated adapted Skillet Quinoa Pasta with Sausage and Spinach (easy and under 25 minutes) the quinoa tastes just like regular pasta!
- Black Bean Chili with Swiss Chard and Butternut Squash (a great way to stretch your meat and incorporate veggies)
- Quinoa Pasta with Pesto adapted from The Barefoot Contessa (simple, and easy substitution when you just need a quick lunch!) And if you feel up for it, just roast some veggies and toss them in it!
- White Bean Soup with Kale from GOOP (great for baby led weaning!)
- Israeli Couscous with Swiss Chard and Sausage (under 30 minute meal!)*not gluten free

There were times I thought my life was busy – during college, and then again when I was planning my wedding while being in 3 others during the same year. Then I had children, and I now have a whole new definition of the term “busy.” Between working, raising two children at home, trying to have a social and family life – things are just going to be busy for a while and I have accepted that. When my son was born, we quickly learned that he didn’t sleep like a normal newborn. After taking him to the doctor several times those first few months, we tracked that he was sleeping 6 to 7 hours in a 24-hour period. His pediatrician said that babies should be sleeping 18 of those 24 hours at that point. At 4 months of age, the pediatrician told me we needed to start sleep training him and that began with establishing a nighttime routine.
My Grandparent’s 80th Birthday Party
Last weekend we had the pleasure of getting the whole family together for my grandparent’s 80th birthdays. They are 4 months apart and so we decided to throw them a party in between their big birthdays. They are the most incredible people I know. At 80 years old, my grandmother still sews quilts and dresses and pants for kids in Panama and my grandfather serves in the most unbelievable way. He is stronger and in way better shape than I will ever be in. My cousins were all sitting around joking about how strong he is and how he can run circles around all of us. He takes food to the sick. He sits with people who are struggling and he comes over to my parent’s house often asking if he can fix anything or do yard work or help us with anything. Shouldn’t it be the other way around? They are truly incredible people.
Casual Valentine’s Day Outfit
I love Valentine’s Day. I remember growing up that we always received candy and a small gift from my parents on Valentine’s Day morning and my siblings and I always enjoyed picking out our Valentine’s Day cards to pass out to our classmates and friends. We would decorate little brown bags and each child would receive a Valentine from all of their classmates. It was something I always looked forward to. Do kids still do that at school? I sure hope so!

My Tiny Valentines
I have the cutest tiny Valentines in the entire world. When I look at them, I am blown away by how blessed Ryan and I truly are. They are so sweet and precious. I thought it would be so fun to dress them all up for Valentine’s Day because it is Sophie’s first. I love celebrating their firsts in a big way! I remember Hampton’s first Valentine’s Day like it was yesterday. Man, time sure does fly when you are in hog heaven!
