I don’t care what Mexican restaurant we go to, it never fails, I always order chicken enchiladas! They are so delicious. Since we moved further out of the city, we have been trying to eat all of our meals at the house so that we don’t have to drive back and forth so much. It is also so much cheaper and we are on a tighter budget, so eating at home just makes sense. It is not always easy with three babies running around, so my favorite meals to prepare are quick and easy. I love making meals that can be completely prepared and cooked in 30 minutes or less. Hello, Rachel Ray! She is a genius. I have played around with different variations of chicken enchiladas, but this is my favorite.
Not only are these chicken enchiladas easy to make and pretty quick, they are absolutely delicious! It is a recipe that will make you go back for seconds and thirds. Or is that just me? It is seriously that good! My recipe makes enough for 5 enchiladas, so double it if you are feeding more people. I usually make these 5 and then make a couple of extra ones for Ryan without cheese. He hates cheese, so I am always making his meals separate. I also add a little bit more spice to his because he loves all things spicy! The only problem with that is he gets heartburn from time to time.
Ingredients
- 5 large Tortillas
- 2 cups cooked rotisserie chicken, shredded
- 2 cups Mexican Blend Shredded Cheese
- 2 Tbsp. Butter
- 3 Tbsp Flour
- 2 cups Chicken Broth
- 1 cup (or 8 oz.) Sour Cream
- 1 can Red Enchilada Sauce
- Diced Green Chilies to taste ( I only use about 1/4 of a 4 oz. can)
Instructions
- Preheat oven to 350 degrees. Grease a 9x13 pan. Mix chicken and 1 cup of cheese then roll the blend in the tortillas and place them crease side down in the pan. In a saucepan, melt the butter and stir in the flour cook for one minute then add the broth and whisk until smooth. Heat over medium heat until it's thick and bubbly. Stir in sour cream and your green chillies, but do not boil. Pour over enchiladas. Pour the can of enchilada sauce as evenly as possible over the enchiladas. Sprinkle the rest of your cheese on top and bake for 22 minutes until your cheese is melted. Enjoy!

This recipe is one that I love to pull out of my back pocket for when we are entertaining guests. Add some spanish-style rice and salsa and it is a crowd-pleaser! We love doing Mexican-style food and have eaten it many years on Christmas or at holiday parties. It’s something everyone loves and is quick and easy.
