Hampton started “school” yesterday – well, technically, Mother’s Morning Out – and he loved it! While we are still trying to get used to a new morning routine, one thing is for sure – I have to make him a good and filling breakfast. My kids wake up so hungry and immediately ask for food every morning. Making them a satisfying breakfast is essential to how we will start our day. No one likes a grumpy toddler, so we try to avoid that. My latest favorite thing to fix them for breakfast is an Eggo® Breakfast Sandwich!
For my kiddos, I normally add egg, bacon and cheese, but really, the sky is the limit! I use Eggo® waffles (which happen to be Hampton’s favorite) as the bread and he loves it! Once he can use a fork a little better, I may even add some syrup! Yum!
Eggo® Breakfast Sandwich Recipe
Ingredients
- 2 Eggo® Waffles
- 1 egg
- Bacon
- One slice of cheese
Instructions
- I pop the Eggo® Waffles in the toaster oven and while they are toasting, I fry my egg and bacon. Once the egg is finished I place it on the waffle and quickly add the cheese so it can melt a little bit. Once the bacon is ready, I place it on the cheese and top it with another waffle! Enjoy!
Another part of our breakfast routine is to have some sort of activity at the table while I am cooking/fixing their food. This keeps them distracted and helps fuel their minds and get their creative wheels turning while I try to get their food ready and lunch packed with as few interruptions as possible. Smart way to make a healthier, more wholesome breakfast with waffles! I usually just toss butter and syrup on mine. But with all the protein, it would keep my boys full longer.
