Easy Crockpot Minestrone Soup Recipe

One thing I look forward to during the winter months are all of the soups and stew recipes especially if they are made in the crock-pot! I am a huge fan of dump soups because they are so easy, quick and really delicious. Our weather here in Alabama has been totally insane these last couple of weeks. We have had temperatures in the 70’s and lows 30’s depending on the day. Because of this, my family has been sick off and on and it seems like we can’t all stay well at the same time. Because I was craving Italian food and not feeling my best last night, I decided to make an easy minestrone soup in the crock-pot.

Easy Crock-Pot Minestrone Soup Recipe

It was my first time to make Minestrone soup, but it was delicious and just what the doctor ordered. Not only did it satisfy my Italian food craving, it was warm and delicious. My husband loves anything with a lot of vegetables, so he was a big fan as well. This was one of the easiest recipes I’ve made and is definitely going into my soup rotation!

Minestrone Soup Recipe

Easy Minestrone Soup Recipe:

Ingredients:

2 tbsp. Italian Seasoning

1 13 oz. can Hunts Tomato Sauce

3 cups chicken broth

2 bay leaves

4 small carrots (peeled and cut into small pieces)

1 tbsp minced garlic

1 can green beans

1 can white beans

2 cups uncooked Ditalini noodles

ground black pepper and salt to taste

Optional: grated Parmesan cheese

Directions:

Pour all ingredients into a crackpot leaving out the noodles. Cook the soup on high for 3 to 4 hours. 30 minutes before serving, pour the uncooked noodles into the pot and then serve.

It really is that easy! I love good crock-pot recipes because you can dump them in and leave them to cook. They are great for busy moms and the perfect solution if you don’t have a lot of time to commit to dinner.

    This looks so delicious!! We love crock pot meals and make them monthly to freeze, it makes life so much easier to pull it out the night before pop it in the crock pot in the morning and dinner is all ready to go at dinner time. We will be definitely trying it out! Have a blessed week!!
