School starts in less than three weeks, so we have been testing out a few new recipes that will be great leftover to pack in the kid’s school lunches the next day! Last night, (you may have seen on my insta-stories) we tried a recipe from Down Home with the Neelys with a couple of minor changes! This quick and easy lemon pasta with chicken recipe was delicious! Our family is a big fan of any type of pasta. Best of all? It is so easy and quick to whip up and everyone is full and happy by the end of the night! This recipe made plenty for the four of us and we have enough leftovers for the entire family to enjoy for lunch today, as well. In other words, it is a major win for us!
Be sure not to over season this recipe because the chicken adds so much flavor that you don’t need a lot of salt and pepper in addition to the seasoned chicken at the end of the recipe.
Lemon Pasta with Chicken Recipe:
Ingredients
- 1 pound dried penne
- 2 chicken cutlets, cut into fingers
- salt and fresh ground pepper
- 3 cloves of sliced garlic
- 1/4 teaspoon of red pepper flakes
- 3 tablespoons of extra virgin olive oil
- 3 tablespoons of chopped parsley
- 2 lemons, juiced
- grated Parmesan to taste
Instructions
- Cook the pasta as directed on the box in salted boiling water. Drain the pasta when finished. Season the chicken with salt and pepper and grill on a pan over medium high until completely cooked. Once finished, slice the chicken and set it to the side. Add the garlic and red pepper flakes to a sauce pan with the extra virgin olive oil and sauce for a minute. Add the cooked pasta and turn off the heat. Mix it all together, well. Finally, Add the pasta to a large bowl and mix in the chicken. Season the bowl with salt and pepper to taste. Sprinkle the chopped parsley and add the juice from the two lemons then mix really well. top the pasta with parmesan right before serving. Enjoy!
When we reheat the lemon pasta, I will add a little olive oil to the dish so that it isn’t too dry! I will let you know how it is and update you in this post once we eat it after reheating. It is a great recipe to take to a friend or a new mom and will feed at least eight to ten people. I am really excited to add it to my list of easy recipes and will definitely use it as a go-to during the busy school year!
This lemon pasta dish is very flavorful and I recommend you serve it with some type of bread and a vegetable like zucchini or asparagus. Had I been a little more prepared, I would have sautéed some asparagus because it is one of my favorite vegetables! Yum! Okay, excuse me while I go stuff my face now.

Yummy! This looks like a prefect school night meal. I would probably saute some broccoli in there as well to make it a one pot meal.
