I love game days, but especially big game days! There happens to be one coming up and we love to get our friends together to celebrate and eat delicious food! This year, we are making our delicious Cantrell Chili recipe that everyone loves! It is always a big hit with our friends and family. The one thing I think about when serving chili is preparing the other bowl for my guests so they feel comfortable in our home. I would never want anyone to feel awkward, so I like to be prepared by stocking up on Poo-Pourri!

This Thanksgiving, my family will be traveling for the first time since I was a kid. To say I am excited is an understatement. We are thrilled to spend this Thanksgiving with my family in Florida for the first time – ever! I look forward to many memories made and laughter that we will undoubtedly have. It is important to me to be a really good house guest. No one appreciates that person who stays with them and wrecks the house or creates a huge mess and doesn’t clean up after themselves. Of course, the main reason I subscribed again was to watch the new Gilmore Girls episodes, but I have really enjoyed watching it when Ryan is traveling or if I am in the mood to wind down with some television at night. I am a huge fan of brunch. In fact, lately my kids have been waking up earlier and that means we eat earlier, so lunch has felt more like brunch around our house. I also helped with a baby shower a couple of weeks ago that was a brunch and the ladies seemed to love it! The only thing missing from the menu were some delicious mocha frappes. Loaded Avocado Bar and Giveaway

Growing up in the state of Alabama, you are forced to choose between Auburn and Alabama at birth. The parents choose for you and that is the team you pull for for the rest of your life. You are raised to strongly dislike the opposite team and their redneck tendencies. The Iron Bowl is the biggest game day of the year. Not the super bowl. Winner accepts bragging rights until the next Iron Bowl and the losing team can be found looking at their shoes for the rest of the year. It’s a really big deal.

Most football Saturdays are spent with family and friends. I love to have easy snacks around the house and I enjoy serving my favorite game day recipes. Whether I serve my Mexican Layered Dip or Frankenstein Guacamole, you can usually bet Avocados from Mexico will be served up in our favorite appetizers. This past week, we celebrated our 4th anniversary. I was reminiscent on one of my favorite parts of our wedding – the loaded potato bar! It was delicious and everyone’s favorite. I thought it would be fun to set up a Loaded Avocado Bar as a healthier alternative for our game day Saturday! I ran to Publix to pick up my Avocados from Mexico and other toppings. I love shopping there because they have the best coupons and deals!

We had fun eating our loaded avocados and watching Gameday on ESPN before we went to Birmingham! It was such a fun and relaxing way to spend our Saturday. I loved setting up this loaded avocado bar and I am looking forward to doing it next time we entertain guests! It’s a fun twist on our wedding favorite!

Mexican Layered Dip Recipe Featuring Old El Paso

Mexican-Layered-Dip

Tomorrow night we are hosting a super bowl party for our life group friends at church. We are so excited to watch the game, but I’m most looking forward to the commercials. For the party I made my mom’s Mexican Layered Dip using avocados from Mexico. I’m a big fan of guacamole. It contains healthy fat and is a great meal or snack. Because I’ve been craving Mexican food for the last couple of weeks now, I knew I wanted to make this dip for my friends…and myself. 😉

Super-Bowl_Party-Ideas

Ingredients:
1 can Refried Beans
1 can of light sour cream
1 taco seasoning
1 can of rotel (drained)
Avocado from Mexico (mashed)
Shredded Cheese (I used light cheddar)







Directions:
In a 9×11 baker, spread the beans, then mix the sour cream and taco seasoning together until blended and spread it on top of the beans. Next, mash your avocado and spread it over the sour cream, drain the rotel and spread it over the avocado layer. Sprinkle on as much cheese as your heart desires and then bake until it is warm and the cheese is melted.

You can eat this with chips, on a taco with meat, however you want! I am serving it as a dip with Tortilla Chips and it is delicious!

How To Have The Perfect Picnic

How To Have The Perfect Picnic

One.
Organization is the key to having a successful picnic. Be sure to lay everything out, check and double check that you have something to sit on, the perfect location, family and friends to enjoy it with you and please, don’t forget the delicious food and drinks. That is, after all what makes up a picnic.

Two.
Pick the perfect location. Consider the people you have invited along with you. For me, I would be considering my husband and 7 month old, so somewhere with a lot of shade would be ideal for us. If you have small children, perhaps a park with a playground nearby would be the perfect location. If you live near a lake or beach, that would also be a great choice. If you are wanting to host a romantic picnic with a loved one, pick an appropriate atmosphere.

Three.
Consider the time of day and pack your food accordingly. Are you going in the morning? Pack breakfast foods and don’t forget that thermos full of coffee, sugar and cream. Are you going for lunch? Sandwiches and carrot sticks are perfect for this time of day. If you’re going around dinner time or my favorite time of day – sunset – pack hotdogs or hamburgers fresh off the grill with chips, pasta salad, etc. It is summertime after all. It’s important to plan the perfect picnic menu for the people you are inviting. Consider their preferences, food allergies, etc.

Four.
I know I stated this in my first point, but don’t forget something to sit on. Consider the people who will be joining you. You may need to include a lawn chair for older people, or maybe bring along a bumbo or bouncer for baby to play in. My favorite thing to bring is an old quilt. I have a bit of a quilt obsession. I carry the quilt my grandma made me in my car most of the time because we always find ourselves needing it.

Five.
Pack your food well. Try to keep them at proper temperature and to bring foods that do well at room temperature for a little while. Pack everything in zip-lock bags, jars, tupperware, saran wrap, whatever will keep it fresh. I recommend bringing drinks in bottles. Bottled water, root beer, coke, etc. are all great options. Anything with a screw on lid will help with spills. No one wants to clean up a mess. If you have a small cooler or thermal bag, feel free to throw some bottles in there with an ice pack to keep the drinks cold.

Six.
Pack napkins, paper plates and plastic utensils. Depending on the number of guests you have attending your picnic, you may consider packing a roll of paper towels. They will be easy to dispose of when you start to clean up. Also, be sure to bring any condiments, salad dressing, salt, pepper, syrup, etc. depending on what you’re eating. These things can literally make or break a meal so be sure to remember to pack these in your basket.

Seven.
You may want to bring bug spray, especially if you live in Alabama where the mosquito is our state bird. Sun screen is also a necessity, especially if you’re like me and bringing along a baby. Protect your skin, folks!

Eight.
Think about entertainment. If you want to bring an Ipod for background music, a good book or magazine, or toys for the kids, be sure to pack those things.

Nine.
Prepare for clean-up. Bring a trash bag, or two depending on the number of guests. Pack wipes for everyone to clean their hands with and maybe even some hand-sanitizer.

Ten.
Have fun. Make good conversation, laugh, relax and enjoy the company and delicious food that you worked so hard to prepare and pack. Everyone loves a picnic. They are the perfect summer day activity for adults and children alike. Enjoy your time with the people you love.
